Men’s Cookery Class 36 

Victoria Sandwich 

All in one recipe 

  • 8 ozs caster Sugar
  • 8 ozs SR Flour 
  • 2 teaspoons baking powder 
  • 8 ozs soft margarine 
  • 4 eggs 

Sieve together flour and baking powder, place all ingredients in a bowl and beat with either wooden spoon, hand held mixer or free standing mixer until you have a smooth batter. 

Divide between two 8 inch sponge tins which have been greased and base lined with baking paper and bake at 180c (160 fan) for approximately 25 to 30 minutes until golden brown and springs back to touch. Let cool slightly in tins before placing based side down onto a cooling rack.  

When cold sandwich together with Jam and sprinkle top with caster sugar. 

Ladies Cookery Class 36A 

Coconut and Cherry Cake 

  • 12oz (300g) self-raising flour 
  • 6oz   (150g) butter 
  • 6oz   (150g) caster sugar 
  • 8oz   (200g) glace cherries 
  • 2oz   (50g)   desiccated coconut 
  • 2 eggs 
  • Approx. 1/4pint (125ml) milk 

Grease and line a 8inch (20cm) round cake tin. 

Sieve flour, rub in butter to resem

ble breadcrumbs, toss the cherries in the coconut and add along with the sugar and mix, lightly beat the eggs and add with enough milk to make a soft dropping consistency. 

Put into prepared tin and level off. Bake at 180c (160c fan) for approx. 1 ½ hours until well risen and golden brown. Leave to partly cool in tin before turning out onto cooling rack.

September 7th 2019, the 43rd Annual Vegetable & Flower Show saw plenty of entries particularly in the vegetable classes. The recent rain and warmth really helped the exhibitors. There was also a very good response in the floral art and ladies baking classes and it was lovely to see the children’s entries. The judges were delighted to see so many entries and expressed their pleasure at the high standard of exhibits. Cups and Certificates were presented by Mrs Barbara Bullion.
